Cabin Cuties Tomato Soup

This is called Cabin Cuties Tomato Soup, because I first bust out this recipe for "The Girls" my group of best friends at our winter cabin girl's trip. It's the perfect comfort food, is surprisingly quick to make, and MUST be eaten with grilled cheese (on white bread with plenty of butter! Don't play.).

Dice the onions. Melt the butter in a large pot. Then add the onions and cook until translucent.

Add the diced tomatoes and stir to combine. Add the tomato juice.

Add 3 to 6 tablespoons of sugar. Some tomatoes are sweeter than others, plus there’s always personal preference, so taste after 3 tablespoons and then decide if you want to add more.

Add bouillon cubes.

Now I love black pepper. So I go a little ham. But add some to your taste then let the soup heat up until it almost begins to boil.

Once it’s nice and hot, turn off the heat. Add your heavy cream, basil and parsley. Stir it all in and serve!

Ingredients

1 medium sweet Vidalia/ Yellow onion

6 tablespoons butter

Two 14.5-ounce cans diced tomatoes

One 46-ounce bottle of tomato juice (it’s in the fruit juice aisle—not the canned soup aisle where I looked!)

3 to 6 tablespoons sugar

3 chicken bouillon cubes (or use vegetable bouillon cubes to keep this totally vegetarian!)

Freshly ground black pepper

1 1/2 cups heavy cream

1/4 cup chopped dried or fresh basil

1/4 cup chopped flat-leaf parsley
