Black Eyed Pea, Collards & Sweet Potato Soup

Southern comfort in a bowl is pretty much all you need to know about this soup. If you know anything about "pot liquor/likker" after a batch of collard greens or black eyed peas have been simmering all day-- then you know just what kind of liquid gold that that broth those vegetables create truly is. This soup gives you a whole bowl of that deliciousness married with a few of my all time favorite southern vegetables- collards, black eyed peas and sweet potatoes. I made this on a weeknight so I didn't go through the trouble of making any bread- but if you're feeling fancy, whip you up some honey cornbread muffins to go a long with this and just have yourself a good ole time. :)
