Red and White Stuffed Shells

Stuffed shells were not a part of my diet growing up. I actually just heard about it last month. (I know that's going to blow some people's minds- apparently it's a "thing" for a lot of people.) Anyway, I had to see what all the hype was about, so I got in my "test kitchen" yesterday and came up with my own version that I think is pretty delicious. There's so much flavor in this dish! I bumped up the ricotta cheese filling with some sundried tomato paste, and added in some sautéed spinach, mushrooms and shredded chicken to make this the perfect one-dish meal. Oh, and I titled this "red and white stuffed shells" because I actually topped the shells with alfredo and marinara sauce. I really wish I could have put this in my 30 minute meals section, because it's so simple, but it juuuust misses the mark. At any rate, it's a wonderful dish that will make the youngest to the most seasoned in the family very happy at the dinner table. Add a simple side salad if you'd like and voila! -- dinner is served!
